Vegetable Soup with Tortellini

Ingredients

8 cups Chicken broth
1 large Onion, diced
2 large Garlic cloves, minced
2 large Carrots, peeled and diced
2 Celery stalks, chopped
4 Green onions, white and green parts
2 Zucchini , diced
1/2 tsp Oregano, dried
1/2 tsp Basil, dried
1 12 oz pkg Frozen tortellini(any flavor)
1 14 1/2 oz can Whole tomatoes, drained, rinsed and chopped
Salt and pepper, to taste
1/4 cup Grated Parmesan cheese

Directions

Heat the broth in a large saucepan and add the onion, garlic, carrots, celery, green onions, zucchini, oregano, and basil. Simmer gently covered for 10 minutes.

Add the tortellini and cook until al dente.

The last 5 minutes of cooking, add the chopped tomatoes.

Season to taste with salt and peppers. Allow to cool before refrigerating.

Sprinkle with parmesan cheese before serving.

Serves 8
