1 tblsp olive oil In a large pot, heat the olive oil until hot and cook onions until tender. Stir in celery and thyme. Stir in carrots and rice and toss to coat. Stir in the stock and bring to a simmer. Cook until vegetables and rice are tender. Stir in turkey, corn and parsley. Return to simmer and season to taste. (If you prefer to use chicken for this soup, that's fine. The rice in the recipe is uncooked, but if using cooked rice, add it at the last with the turkey and corn.) Makes 8-10 cups.
