Ricotta or Cottage Cheese Pancakes (with elderberries)

Ingredients

6 eggs, separated
2 c ricotta cheese, or cottage cheese
2/3 c flour
2T honey
1/2 tsp salt (optional)
1/8 tsp creme of tartar

Directions

Beat yolks and cheese together. Stir in honey and flour and salt.

Whip egg whites with creme of tartar till stiff, but not dry peaked. Blend gently into cheese mixture,( stir in frozen elderberries if available...for special occasions). Fry on well oiled griddle by large tablespoonfuls and serve with honey or fresh/frozen berries, or with lingonberry preserves.
