Deviled Eggs

Ingredients and Directions

Boil a dozen eggs for 12 minutes. Cool immediately. Shell carefully, then slice in half longways. Put the yolks in a bowl, and the whites on a tray, cover with a damp towel or cover with wrap to keep them fresh.

Add to the yolks 1/2 cup mayonaise, 1Tbls fresh ground mustard, 1/2 tsp salt and pepper to taste. Mash together until smooth. Place in a pastry bag with a fluted tip and pipe into whites. Carefully dust tops with a little paprika and garnish with green onion curls.

To curl green onions, cut them into narrow strips and drop them into a bowl of ice water until they curl up.
