2 tablespoon of olive oil Directions Heat oil in a medium saucepan until it's hot. Add the onions and saute until soft (3-4 minutes). Add the ginger and dates and sauté for another minute (stirring). Add the red pepper flakes, molasses and lemon juice and mix well. Bring mixture to a simmer and stir in bananas. Simmer, stirring occasionally until the liquid is mostly evaporated (7-10 minutes). Remove from heat and stir in mint and season to taste with salt and pepper. The chutney can be kept covered in the refrigerator for about a week. |
