Kitchen Sink Salsa

(Goes great with grilled poultry.)

Ingredients

2 green onions (white and green parts) chopped – about ½ cup
1 cup red onion chopped
1 cup cucumber chopped (drain in salt for about 30 minutes and rinse well)
3 medium tomatoes seeded cored and chopped
¼ cup diced poblano pepper
1 cup corn (blanched)
1 cup chopped bell pepper (any color)

Directions
Mix all ingredients together in a bowl.

Dressing:

¼ cup olive oil
1 T white wine (optional)
½ cup lime juice
½ t salt
½ t cumin
¼ cup chopped cilantro

Whisk all ingredients together. Pour over salsa. Stir and refrigerate for a couple of hours before serving.
