Baked Chicken Breasts with Tomatoes and Middle Eastern Spices

Ingredients

2 T olive oil
1 large onion chopped
8 large cloves minced garlic
4 teaspoons cumin
2 teaspoons coriander
½ teaspoon paprika
½ teaspoon turmeric
¼ teaspoon cayenne pepper (or to taste)
Salt and freshly ground pepper (to taste)
1 14 ounce can drained and chopped tomatoes
1 T tomato paste
½ cup water
6 boneless skinless chicken breasts

Directions

Oven 400 degrees.

In a large skillet, heat the oil. Add the onion and sauté until golden (about 7 minutes). Stir in garlic, spices, salt and pepper, tomatoes, tomato paste and ¼ cup of water. Cook 1-2 minutes until well combined. Set aside.

In a large glass baking dished sprayed with cooking spray, place the chicken breasts in a single layer. Season lightly with salt and pepper. Add the tomato mixture. Add the remaining ¼ cup of water.

Cover dish with foil and bake for 20 minutes. Uncover and bake an additional 15 minutes.
