½ lb bacon chopped Directions In a large Dutch oven, render bacon and remove to drain on a paper towel. Discard all but 2 tablespoons of grease. To the grease add the onion and saute for 2 minutes. Add the carrots, celery and bell pepper and saute two minutes. Add the garlic and saute 1 minute. Add flour and cook, stirring, for two minutes. Add salt, pepper and potatoes and cook stirring for two minutes. Add chicken stock, stir and bring to a simmer. Cook 10-15 minutes or until vegetables are tender. Add corn, chicken, margarine and milk and simmer 5 minutes. Add cooked bacon and cayenne pepper and simmer 5 minutes. Taste and adjust seasoning if needed and serve. Makes 12-14 cups |
