Parmesan Cheezy Poofs

Ingredients

2 cups milk
1 cup olive oil
2 cups all-purpose flour
8 eggs, beaten
3 cups Parmesan cheese, grated or shredded (not powder)

(Assorted dipping sauces -- marinara, alfredo, barbecue, whatever.)

Directions

Preheat oven to 375. Grease cookie sheets.

Boil milk and olive oil in small pot. Remove from heat; stir in flour until mixture looks like mashed potatoes. Blend in eggs with hand mixer. Stir in cheese and knead together.

Grease your hands with olive oil. Use a teaspoon to scoop balls of dough; roll them in your hands and place on cookie sheet (I used cheap throwaways and managed to safely get 24 on a sheet; they puff but not too much). Bake at 375 for about 12 minutes. Remove from sheet and start the next batch. Serve with dipping sauces.

Makes about 75.
