Bacon and Water Chestnuts

Ingredients

1/2 lb bacon cut in half (also: thick bacon doesn't seem to work as well)
Brick of white cheese (I use mozzarella) cubed
Toothpicks
Whole water chestnuts
Parmesan cheese

Directions

Preheat the oven to around 300-350 degrees.

Cook the bacon in a large skillet until it is almost done but still flexible. Drain and let cool.

Put one whole waterchestnut onto the center of the bacon slice and one piece of cheese. Wrap the bacon snugly around the cheese and chestnut and stab a toothpick through the center to hold it all together.

Lay bacon pieces out on a baking sheet and put in the oven for 15 minutes or so. You want the bacon to finish cooking but you don't want all the cheese to melt out.

When they are done let them cool on paper towels (to soak up the grease) and sprinkle liberally with Parmesan cheese.
