1lb butter, room temp Directions Beat the butter until it is soft. Crumble the bleu cheese, then fold in well, adding a little cream if necessary to keep the texture smooth and spreadable. Form into half-sphere on a large plate and chill overnight. To serve, bring to room temp and encircle the ball with good water crackers and rye crackers and stick a butter spreader in the top. If you want to dress it up, tuck some sprigs of parsley in around the cheese ball before ringing with crackers. You could also roll the ball in chopped nuts, and I'd recommend English walnuts or almonds |
