Rosettes

Ingredients

The only special tool you need for rosettes is a Rosette Iron.

In a bowl, combine the following:

2 eggs
2 tsp sugar
1/4 tsp salt
1 cup flour
1 cup milk
1 Tbls lemon extract or vanilla extract

Directions

Have handy a fork for the frying process. Heat oil 2"-3" deep in a frying pan to 375F.

Dip the iron until it is hot, drip off the excess oil, then dip into batter, but don't go over the top of the iron. Dip the iron into the hot oil, holding it there. If the temp is correct, it'll take a count of about 13 for them to be done. They might fall off of the iron when you go to remove them. If so, just grab them with the fork. Be careful of steam burns. Most have longer handles, but mine's shorter, so I have to be a bit more careful. Drain the rosettes on towels, then dust with powdered or fine granulated sugar.
