Prairie Honey Pumpkin Bread

Ingredients

3 1/2 cups all-purpose flour
2 tsp baking soda
1 1/2 tsp salt
1 tblsp freshly ground cinnamon
1 tblsp freshly grated nutmeg
2 cups sugar (or 24 packets of Sweet N' Low can be substituted for 1 C of the sugar...the bread will be slightly less sweet)
3/4 cup wildflower or other pale honey (I have used orange blossom)
1/2 cup water
1 cup vegetable oil
2/3 C canned pureed pumpkin
4 large eggs slightly beaten
1 C chopped pecans (optional)
1/2 C golden raisins (optional)
1/2 C chopped dates (optional)

Directions

Preheat the oven to 325 and grease and flour two 9 x 5 inch loaf pans.

Sift the flour, baking soda, salt, cinnamon, nutmeg and sugar into a large bowl. Blend in honey, water, oil, pumpkin and eggs until the batter is smooth. If adding the optional ingredients, fold in and incorporate.

Divide batter into the two prepared pans. Bake 50-60 minutes (or until a toothpick inserted in the center of the loaf comes out clean). Cool in pans on a wire rack. May be frozen.
