6 medium baking potatoes (2 pounds) Directions Grease a 1&1/2 qt casserole dish and set aside. If desired peel potatoes. Quarter potatoes and cook covered, in salted boiling water for 20-25 minutes. Meanwhile, in a small skillet cook the green onions and garlic in butter till tender. Mash the drained potatoes, add onion mix and sour cream, 1/2 teaspoon salt and 1/4 teaspoon pepper. Gradulally beat in enough milk to make smooth and fluffy. Transfer to prepared casserole. Can be chilled up to 24 hrs. To serve bake uncovered at 350f for 45-50 minutes. Sprinkle with parsley if desired. Serves 6 |
