Mattie's Fry Bread

Ingredients:

4 handfuls of flour (that’s heaping handfuls, which equals about one C each handful, or four C of flour)
1 palmful of baking powder (1 T)
1 small of the palm of salt (1 t)
Enough water to make a dough that isn’t sticky, just clings together well.

Procedures:

1. Heat about 1/2″ of oil in a pan and with well-floured hands, pinch off balls of dough.

2. For straight fry bread that you’ll be dipping in wajapi (an unthickened fresh jam) or just eating plain, a walnut sized ball is good. For Indian Tacos, make them larger.

3. Pat the ball out into a flat round and fry until golden brown on both sides (check after a couple minutes, then flip).

4. Drain on towels and serve hot. .

Comments:

Yes, that’s really all there is to it. You can roll them out with a rolling pin for flatter bread if you like. I never do.

The way I make it is with my hands, though you can use measuring cups, too, and I gave both measurements for ease of use for those who use their hands to measure, and those who do not.
