Tequila and Lime Pork Ribs

Ingredients

3 lbs country cut pork ribs (either bone-in or out)
Salt
Freshly ground black pepper
1 C olive oil
4 limes, juiced
1/2 C tequila
1/2 C finely chopped onions
2 T minced garlic
2 medium jalapenos, stemmed, seeded and finely chopped
2 T finely chopped fresh cilantro leaves

Procedures

1. Season the ribs with salt and pepper.

2. In a bowl, whisk the oil, lime juice, tequila, onions, garlic, jalapenos and cilantro.

3. Place the ribs in a glass baking dish. Pour the marinade over the ribs, coating each side completely. Cover with plastic wrap and refrigerate overnight (at least 12 hours), turning two or three times.

4. Remove from the refrigerator and bring the ribs to room temperature.

5. Preheat the grill or smoker. Place the ribs on the grill and baste with marinade once on each side.

6. Cook for about 1 1/2 to 2 hours, or until the ribs are tender. Ideally, this should be done on a smoker and the fire should be medium-low to low since you’re going for tender.

Comments

This recipe can be adjusted. Figure one pound of ribs per person due to the bone/fat and adjust the marinade accordingly.
