Cranberry Fruit-Nut Bread |

Ingredients
2 cups all purpose flour, sifted 1 cup sugar 1 1/2 tsp baking
powder 1/2 baking soda 1 tsp salt 1/4 cup shortening 3/4 cup
orange juice 1 Tbs grated orange rind 1 egg well beaten 1/2 cup
chopped nuts 2 cups fresh cranberries, chopped
Procedures
Sift together flour, sugar, baking powder, soda and salt. Cut in
shortening until mixture resembles course corn meal. Combine orange
juice, rind and egg. Pour in all at once the dry ingredients, mixing
just enough to dampen. Carefully fold in chopped nuts and cranberries.
Pour into greased loaf pan. Spread corners and sides slightly higher
than center. Bake in moderate oven at 350 about 1 hour, until crust is
golden brown and toothpick inserted comes out clean. Cool. Remove from
pan. Store over night for easy slicing.
